  • 1 cup canned pumpkin puree, unsweetened and unflavored
  • 1 tablespoon molasses
  • ½ cup unsweetened applesauce
  • 1 cup buckwheat flour
  • ½ cup sprouted whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  1. Combine the pumpkin, apple sauce and molasses together
  2. Stir together the flours, baking powder and cinnamon
  3. Stir the dry ingredients into the pumpkin mixture
  4. Flatten the dough by hand on a floured board or table until about ¼-inch thick.
  5. Because we don’t have an oven on the road, we cook them in a dry cast iron pan over medium low heat. But you could bake them on a parchment lined baking sheet at 325F for 15 minutes.
  6. Heat your pan over medium-low heat until hot.
  7. Cut the cookies into the desired shape and place them in the pan, leaving a little space between them.
  8. Cook until the first side has browned, about 2 minutes. Flip and repeat with the other side.
  9. Repeat with the remaining dough, rolling up and flattening any scraps as you go.
  10. We store them in the freezer after they have chilled, taking out what we need for a day at a time.
