Green Beans with Sesame Lime Dressing

The dressing for this salad is both simple and extremely versatile. A quick to put together mix of oil toasted sesame seeds, lime juice and soy sauce is all you need to turn tender green beans in to a unique side dish. The dressing would be great on some chilled soba noodles or as a dressing for a simple cabbage slaw.

Ingredients
  • 1 lb/450g green beans, any tough stem ends trimmed
  • Kosher salt
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon untoasted sesame seeds
  • 1 tablespoon lime juice, reserve the squeezed lime
  • 1 tablespoon soy sauce
Instructions
  1. In a small pan or pot, heat the olive oil and sesame seeds together over medium heat until the seeds are sizzling.
  2. Let them cook until they have darkened a couple of shades and smell nutty. Stir from time to time to time.
  3. When they are toasted, or at the first sign that they may be about to burn, remove the pan from the heat and stir in the lime juice, soy sauce and the leftover squeezed lime pieces. This will sizzle at first, so watch out for any spatters of hot oil.
  4. Let cool to room temperature, then remove and discard the lime pieces
  5. Bring a medium pot of water to a boil
  6. Season the water with an ample amount of salt, 1 ½ - 2 tablespoons per quart/liter. It needs that salt to season the beans as well as to help preserve the color of the beans. Not much salt is absorbed by the beans
  7. Once the water is at a rolling boil, add the beans and cook until they are tender but still have a little bite to them, around 6 minutes.
  8. Drain the beans well
