This Vegan MoFo week 2 recap is a little late, but here it is! Week 2 was all about the fun behind the scenes, from favourite kitchen gadgets to your spice cupboard. It was a lot of fun keeping up with the daily prompts. Check out the highlights from other VeganMoFoers here.
In case you missed something from Two Happy Rabbits this week, we wanted to offer you a quick recap of the fun food we’ve put together.
Day 9 – Favourite Kitchen Gadget
There is nothing more important in a kitchen than a well sharpened knife. We included a tutorial on how to sharpen your knives with a whetstone.
Day 10 – Secret Ingredient
We were asked to share our favourite secret ingredient with you. While not necessarily a secret, that pasta cooking water you pour down the drain is often the difference between a good and great pasta dish. We also cleared up what “salted water” means when cooking pasta, and we included a recipe for a vegan Puttanesca, too.
Day 11 – Give us a Kitchen Tour
We live in our 21-foot campervan as we travel around North American, so our kitchen is definitely unique. Get a little peek into what we brought with us.
Day 12 – Grocery Store Hints and Tips
Spoiler alert! It’s don’t shop hungry. We shared some smoothie recipes from our former smoothie shop owner days.

Day 14 – Re-purposing Food Scraps
Having a few recipes in your back pocket to help use up vegetable trimmings is always a good idea. You can make great food, and save money. We share a recipe for a simple soup made from leftover pea pods and asparagus stems
Day 15 – Give us a Peek at your spice cupboard
We love spices, and we travel with a lot of them. But we have a little corner of a cupboard to store them in the truck. Here’s how we do it.
Day 15 – Bonus Recipe!
Let’s use some of those spices! We made a Lebanese-inspired baked eggplant with za’atar.
